Balinese Prawn Soup

Cookware:

  1. 25 cm Non-stick Frying Pan with Tempered Glass Lid

  2. 3 Litre Saucepan and Lid

Ingredients:

  1. 225 g green beans

  2. 1.2 litre water

  3. 1 garlic clove

  4. 2 macadamia nuts (or 4 almonds)

  5. 200 g small prawns

  6. 2 tsp coriander

  7. 2 tbsp vegetable oil

  8. 1 onion

  9. 400 ml water and soy sauce mixture

  10. 2 bay leaves

  11. 8 thin slices of lemon

  12. 30 ml lemon juice

  13. 400 ml сoconut milk

Nutritional information per 1 serving (400 ml):

  1. Protein – 6.1 g

  2. Fat – 8.0 g

  3. Carbs – 6.5 g

  4. Energy value – 123 kcal

  5. Cholesterol – 38 mg

  6. Glycaemic index – 40 (low)

  7. Please be advised that 100 g of prawns contain 144 mg of cholesterol.

Preparation method:

  1. Boil green beans in salted water in a 3 litre saucepan until cooked. Then remove beans but reserve the water.

  2. Sauté thinly sliced onion in the frying pan until it is soft.

  3. Use a blender or finely chop the nuts, coriander and garlic with a knife. Then add all of them to the onion in the frying pan.

  4. Add spices and coconut milk to the saucepan. Bring all the ingredients to the boil, add bay leaves, cook for another 15-20 min without covering.

  5. Just before serving add prawns and green beans as well as lemon slices and lemon juice to the soup.
    Fresh green beans can be substituted with frozen ones, and soy sauce can be added instead of coconut milk.
