California quinoa bowl

Delicious and nutritious – this colourful bowl is super easy to make. So if you’re in a pinch for a healthy and quick meal, you will not be disappointed!

iCook products used:

  1. Wooden Cutting Board

  2. 5-Piece Knife Set

  3. 2 l Mixing Bowl

Ingredients:

  1. 1 red bell pepper, sliced

  2. 3 tbsp. olive oil, divided

  3. 1/4 tbsp. garlic powder

  4. 250 g cooked quinoa

  5. 150 g canned corn, drained

  6. 40 g red onion, finely chopped

  7. 1 medium avocado, sliced

  8. 6–8 cherry tomatoes, halved

  9. 5 g of coriander (or a combination of your favourite herbs), chopped

  10. 1/3 tbsp. lime juice

  11. Salt and pepper to taste

Preparation Method:

  1. Preheat oven to 220°C. Toss the red bell pepper with 1 tbsp. of olive oil, sprinkle with garlic powder, and season to taste with salt and pepper. Roast pepper for 15 minutes or until it’s soft and slightly charred. Set aside to cool down.

  2. Add the cooked quinoa, sweet corn and chopped red onion to the mixing bowl.

  3. Once the bell pepper has cooled slightly, add it to the bowl together with the avocado and cherry tomatoes.

  4. Drizzle the remaining olive oil and lime juice and season with salt and pepper. Toss everything together and enjoy!
