Aubergine salad


If you’re looking for a light lunch option or a delicious side for your dinner, this salad is the one for you. Quick and easy to make and bursting with classic Mediterranean flavours, it is bound to be the star on your table.

iCook products used:

  1. 5-Piece Knife Set

  2. Non-Stick Frying Pan with Lid, 28 cm

  3. 2 l Mixing Bowl


  1. 750 g aubergine

  2. 4 tbsp. olive oil, divided

  3. 1/2 tsp. smoked paprika powder

  4. 1/2 tsp. cumin powder

  5. salt and pepper to taste

  6. 250 g cherry tomatoes

  7. 2 tbsp. white wine vinegar

  8. 1 tbsp. sesame seeds, toasted

  9. 3 tbsp. fresh parsley, chopped, for garnish

Preparation method:

  1. Cut aubergine into 2-cm cubes.

  2. Heat 2 tbsp. of olive oil in the pan and put aubergine in. Season with smoked paprika, cumin, and salt and pepper. Fry for 6-7 minutes, gently tossing, until it’s done. Put it in the mixing bowl.

  3. Cut the cherry tomatoes in half and add them to the bowl.

  4. Dress the salad with white wine vinegar and the remaining olive oil and season with salt and pepper. Add sesame seeds and toss everything together. Garnish with fresh parsley.
