Cool as a cucumber gazpacho


This easy-to-make cucumber gazpacho is a refreshing summer alternative to your usual soup recipes

iCook products used:

  1. 5-piece knife set

  2. Cutting board


  1. 2 large cucumbers, peeled, deseeded and roughly chopped

  2. 500g Greek yoghurt

  3. 1 tbsp lemon juice

  4. 3 sprigs of fresh dill or mint

  5. 1 stick pack of Nutrilite™ Fibre Powder

  6. Optional: 1 clove of garlic, peeled

Preparation Method:

  1. Place the cucumber in a blender with the yoghurt, dill or mint, and lemon juice. If adding garlic, be sure to grate it.

  2. Add one stick pack of Nutrilite™ Fibre Powder.

  3. Blend until smooth.

  4. Season with salt and pepper.

  5. Chill for at least an hour before eating.


Add a splash of olive oil for extra richness.
